Sesame Green Beans

St. Patrick's Day is just around the corner.  So I have been thinking about some of my favorite "green" foods to share with you!

So let's get started with my all-time favorite way to eat green beans:  Sesame Green Beans!

I think this might just be the first time that I am sharing a recipe for a vegetable!  One of my goals this year has been to encourage Little Man (and the whole family!) to eat healthy.  While he loves fruits, eating vegetables is a struggle in our household.  So I began our vegetable journey with one of our family favorites.  These sesame green beans are crunchy and tangy and sure to please!  Plus super easy!

Sesame Green Beans

3/4 lb. fresh green beans (or 1 lb. frozen)

1/2 c. water

1 T. butter

1 T. soy sauce

2 tsp. sesame seeds, toasted

Directions:

Toast sesame seeds in oven, watching carefully.

In a saucepan, bring beans and the water to a boil.  Reduce heat and cook till crisp-tender.  Drain.

Add butter, soy sauce, and sesame seeds.  Toss to coat.

All done!

Little Man actually ate 3 (yes, three!) entire green beans.  Not bad.

We have a rule when trying new foods, he has to eat "three" bites since he is 3 years old!

This is one vegetable I actually crave.

  1. OMG! Reed is sooooo picky! But it’s just at home! He eats everything they give him at daycare! He just started eating some fruits for me(strawberries, apples and bananas). I asked our pediatrician if I should be worried and he said that if he has at least one serving of fruits or vegetables A DAY at this age, you’re doing good. So that helped relax my mind a little. To get his vegetables, we started giving him V8 Fusion Light juice. He loves it! (It is loaded with tomatoes, beets, and some other veggies in addition to the strawberries and bananas that he already loves.) I totally feel your pain….

  2. Yum! I love green beans in nearly all ways there are to make them. Adding these to my list!

    I love that you have Little Man eat as many bites as his age. I may have to try that! I have quite the picky eater, too. One thing we have done since he isn’t big on his veggies is get the V8 juice (100% juice) with veggies and fruit. He likes it and has no idea what he’s really drinking!

  3. This is my favorite way to eat green beans too! I brought them to a church dinner one time and I think I got about a dozen recipe requests. They’re so simple, but so tasty!

    I like your 3 yr 3 bite rule! Veggies are a struggle at our house too. I try to get DS to sniff the things he doesn’t want to eat and half the time he ends up trying it. I had him help me snap the ends off the beans and said “Don’t you dare eat those!” and he did!
