I hope you enjoyed a fun-filled Father's Day with your families yesterday!
We spent our Father's Day on a road trip, making the long trek from Utah to Colorado. Mr. Oopsey Daisy has 2 brothers getting married this summer, so this weekend we attended wedding #1. We have lots of stories and pictures to share later on.

That’s so cute, but we never have *any watermelon left. Actually, I usually cut it all up in a bowl, take a break and come back to the bowl half empty. You’d think the culprit would be my daughter, but nope… it’s my husband. He could eat a whole watermelon himself, I think, if I’d let him.
I might sneak some and try this, though!
Sounds good, we will have to try this. for another idea with left over watermellon is to freeze cubed watermellon on a tray, when frozen put in a ziplock bag and use it in place of ice cubes in smoothies.

We have a big family, and it still sometimes can go to waste before we eat it all. I will definitely be trying this!
this comes at a PERFECT time…i have a mushy watermelon in my fridge and the hubs is workin late so i’ll whip this up for my kids for our movie night & they’ll think i’m the COOLEST mom ever!
