softest.sugar cookies.ever

Seriously, they are so soft and yummy.  I have tried out several sugar cookie recipes, but this one is the best by far.  They stay soft forever... At least as long as I can keep from eating them all!  And the recipe is easy-peasy.  Don't believe me?!  Try it out!!

Softest Sugar Cookies Around
1 c. sugar
1 c. butter
3 eggs
3 tsp. baking powder
3 1/2 c. flour
2 tsp. vanilla

Cream butter and sugar.  Add eggs and vanilla.  Mix in dry ingredients.  Chill 1 hour.  Roll and cut.

Sprinkle with sugar.  Bake at 375 for 8 minutes.

** For extra softness, store cookies with a piece of bread in an airtight container. **

I frosted these happy little shamrocks with a mixture of evaporated milk, vanilla, and powdered sugar.  The only problem with how soft they are is that they break easily... and what's a girl to do but eat them?!


I made these little bags tonight for the ladies I visit teach.  I want to go drop them off tomorrow.  I made this bag topper in Photoshop and folded it over a ziplock bag.

    Finally, I am no baker. I cannot bake to save my life. I can cook like there's no tomorrow, but when it comes to things like cookies, I thought this recipe would be perfect! My little girl wanted to make some "star cookies" for New Year's Day. She helped me mix up your recipe and was super excited to roll them out and cut her stars. After chilling like I was supposed to, I laid the dough out, ready to roll, and it was like clay! I couldn't believe it! I tasted the dough, which normally cookie dough is the best thing ever, but it was sooo gross! I couldn't figure out what I had done wrong, but by golly, my 3 year old was determined to have cookies, so instead of rolling them, we simply dropped them onto the sheets instead. After they baked and cooled, we did our little taste test… they looked and tasted like biscuits!!! Still perplexed, I just resigned myself to the fact that I can't bake and this experiment proved it. 😉
    About three days later, I was reading a different recipe for sugar cookies, and I realized what I had done wrong: One stick of butter too many! I wasn't paying attention (I wonder why… hmmm, a 3 year old in the kitchen with me and lots of messy ingredients surrounding her!!): I thought 1 stick = 1 cup… WRONG! GROSS!!!
